Mediterranean Shrimp & Feta Bake

***Preheat oven 425F***

Ingredients

  • 1 lb shrimp peeled and deveined (makes about 3 servings)
  • 4 garlic cloves minced
  • ½ - 1 yellow onion - finely diced
  • ¼ tsp paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp dried oregano
  • ¼ tsp red pepper flakes
  • EVOO
  • 1 pack of the variety color cherry tomatoes sliced in half
  • ¼ cup fresh parsley 
  • ~ half a block of feta cheese crumbled
  • ½ lemon juiced & more fresh parsley for serving
  • S+P

 
Method

  • Preheat oven to 425F
  • Heat up a cast iron skillet and heat EVOO
  • Sauté onions first for about 3-5  minutes 
  • Add in garlic and sauté for another 1 min. Until fragrant
  • Add in sliced tomatoes and stir. Bring to a simmer and start to break tomatoes with a masher gently
  • Allow to simmer and cook for 5-10 minutes ( i did about 9 min) - want the juices to thicken slightly
  • Take off the heat
  • Add in feta, shrimp, and parsley, S+P (three pinches of salt)
  • Stir to combine and put into the oven 
  • Bake for about 10-12 minutes (mine was 10, then i put the skillet on the top rack for the last 1ish min.)
  • Serve immediately with crusty garlic bread, pasta, or rice!
